Do you serve with the saw mill gravy? I love mine with tons of black pepper.
Last year we made chicken fried backstrap medalions. Yummy!!! Marinadted them first. It was awesome.

Cut the loins in 1/2" steaks and pound flat. Flour, egg, crumbs and fry just a minute or so a side. Spoon full of your favorite gravy on top and mozz cheese and bake in the oven til cheese is melted. Venison parm is sooooo good:bow:

take the renderings from the pan add a little more flour teaspoon to a table spoon (your own thickness) brown very well and add milk or heavy cream to taste and bring to a rolling boil cook till you get your thickness add any spices that you like (black pepper or anything hot is good) bacon grease is a good additive for adding grease to get the gravy started:thup:
this is not a diet plate :D

I knew I remembered this thread!! I took out a little too much loin for dinner the other night and figured I will give that milk gravy a try tonight. Fry up a couple pieces and we'll be in business. Thanks. Any more good ones, boys:huh:. We did a butcher marathon last night so I have to make a little room in the freezer anyway. Bring on the recipes.

Get your meat back yet Surferdude? Killed one not too long ago if I'm not mistaken? Venison is truely awsome. Don't be afraid to experiment. I cook it in the same dishes that call for beef, you just have to adjust for the fat content a little. A little chopped up bacon in your ground venison when preparing a meat loaf never killed anyone:rolleyes:;):D.

Had chili lastnight! Awsome. Put a small can of Bush's baked beans in along with the other beans and ingredients. Added a little sweetness and is a permanent addition to my recipe:D. Keep on with the recipes. Tell me how you cook yours!!!
