Need a good reipe for deer chili. Im making it for a party this weekend. Anybody have any good ones?

3 pounds ground venison
1.5 pound sausage (sweet or hot)
1 large can red and white kidney beans (40oz)
2 cans (28oz) crushed tomatoes with basil
2 cans (28oz) chopped tomatoes (petite cut)
1 can tomato paste (12oz)
2 (28oz) cans of water
1 large sweet onion
3-4 Tbs garlic
2-3 peppers diced (yellow and red)
Spices:
Cumin
Chili powder
Cayenne pepper if you like to spice it up a bit
Salt
Pepper
Basil
Sugar
Sauté onion, garlic and peppers with a little olive oil and salt and pepper.
Combine crushed tomatoes, chopped tomatoes, tomato paste and water on low heat to cook down in a large pot. Add sugar to taste.
Add the sauteed onion, garlic and peppers to the pot when sauted. Add spices below depending on your desired taste. The cumin is what gives it that 'chili' taste. Add your browned meats to the pot. Drain the kidney beans and add to the pot. You will probably need to add more spices to the pot after adding the kidney beans.
Serve with shredded cheese on top and a good beer (no cheap stuff :D).

Warning: This will make quite a bit of chili so be prepared for freezing unless you're having a party, or just cut the ingredients in half. I like to make plenty so that I can freeze it for later.

i just finished grinding and weighting ground deer meat. now i know what to do with the 25-1 1/4lbs packages. add this too the other two deer, i'm around 50 packages now.
buy red meat? ha! i laugh in your face.:D

2 lbs. hamburger, you can also add chopped meat cubes.
4 tablespoons of olive oil.
2 large yellow onions, peeled and chopped.
8 cloves of garlic, peeled and crushed.
8 tablespoons of chili powder, or to taste. If the meat is venison, use 10-13 tablespoons of the chili powder.
3 tablespoons of cumin.
2 tablespoons of worcestershire sauce.
1 large can of crushed tomatoes.
1 green bell pepper, seeded abd chopped.
1 can of red kidney beans.
salt & pepper to taste.
*add a few dashes of tabasco sauce if you like
Brown the beef in the oil, along with the onion, garlic and chili powder. When the meat is brown and the onions are clear, drain off the fatty liquid, and add the remaining ingredients, including the beans.
Simmer on low temp. for 3 hours at minimum.
You can serve with rice. Also you can top with sour cream, chopped onions, shredded chedder cheese.
Good with corn bread
Family recipe. This chili has won me cook offs. Give it a try you'll love it.

I'll take venison over beef anyday.
I haven't purchased ground beef in probably 3 years. It's nice to brown meat without seeing all that fat like you do from beef. I actually had a beef steak about 3 months ago and the taste was horrible compared to venison loins :thup:.

Don't discount the sugar as an ingredient. Or try cinnamon. It's that secret ingredient that really brings it alive. :thup:
