i used to duck hunt for years, grew up doing it.
i haven't had a piece of duck or goose it liked.

i do geese and duck the same way.take the breasts and put in a crock pot with a miller light and some beef broth.cook on low for 9-10 hours so u can peel it apart like pulled pork.take your pulled duck and mix with sloppy joe mix and stick it on a bun with some sour cream.works for me.

Early season south zone, they can be alright:). Those orange legged ones:cool:. But those late season blackies and Mallards can be pretty gamey. As far as brant, Mergansers, Bufflehead, etc, aint fit for the dog:thdown:

Shoot woodies and teal, hard to mess those up.:D.........I like them rare on the grill with bacon and onions........don't over cook. Easy fast and tasty.

Cut one breast into 6 pieces take one same size piece of apple rap in bacon deep fry,grill,pan fry it doesn't matter.best recipe i found

Teal: Take teal breasts and cut each in half (will have 4 pieces from 1 teal) and soak in orange juice for 2-4 hours. Drain juice and mix in your favorite BBQ sauce. Wrap each piece in bacon. Use a toothpick to hold bacon around teal. Cook on the grill. Awesome with a couple of beers. I have people fighting over them.

Goose: Put goose meat in crock pot the night before. Put 1 beer (I prefer Yuengling) some onion, old bay seasoning, and garlic. Fill crock our with water so the meat is covered. Cook overnite.
In the morning, remove goose meat and pull apart with a fork. Meat should be super tender. Dump crock and clean. Put the goose meat back in crock and add 1 can of Coke and your favorite BBQ sauce. Cook for 3-4 hours on low. I sometimes saute onions and peppers and add them in as well.

brest them out.. score the fat and sear until the fat is crispy... turn over on the meat side and cook in th efat.. serve med rare...

save the fat and cook the legs confit style

what kinda ducks you using for that philly? i rarely see one with any fat on it...

not that much fat on a wild duck.
buffies get a layer late season, but i wouldn't eat fish flavored crispy fat.

this goose reciepe sounds good ,got a couple in freezer gonna try this thanx
