Got my Buck back from the butcher.Man o Man Bucks Co. produces some of the best eatin deer I have ever had.
For many years running we have shot Bucks Co. deer and always have had excellent table fare.
My wife thought it was prime steak. Its never ever gamey.Kids loved it.
We have brought deer up to our camp and we have a couple Jersey guys in the group and they always comment of the deer steaks and roast.
I hunted in South Jersey for many years getting many many deer the deer always ate a bit different from real gamey to ok.Our mountain (camp deer) are good but you know you are eatin venison.
I know you are what you eat so it plays out in the animal kingdom.I have seen deer in Jersey eating moss and lichen and red oak acorns. Thus not all that tasty
Camp deer(mountains) saw them eating similar stuff even watch one eat a tree stump. Those deer can be a bit tough
Bucks Co. deer feed on nothing but soybean, wheat, corn. They are tasty! I wish I could share.I have 3 Doe tags and I will most likely get one more for me this Saturday.Anyone want one. I will gladly give out the deer you got to butcher it .

i agree farm country deer taste better.
our south jersey farm deer taste better then the piney deer and mountain deer.
but my deer have fields to eat in all year long and water within 200 yards at all times.

Ridge- I read that you shot that buck near Perkasie. By any chance where you near the pennridge airport, 3-mile run area??

No. Private ground off of Forrest Rd. Near Old Beth Pike. I do see the planes settig up their landing patterns. Iam probably 3 - 4 miles as the crow flies from the airport.

Being born in Bucks Co. I have to agree with that statement! I was raised in Danboro Pa (if you know where that is?) & hunted that area all of my youth! My father & I have taken quite a few deer from there & they all have been very FATTY deer! Corn Fed deer are very tasty! There are a lot of farmers in Bucks Co. As soon as you open the cavity you see all the fat in there you know it's going to be a tasty one! ;)

I hear ya.Gutting that buck it looked like a Doe nursing. The fat was incredable. It was all threw him.It took me twice as long to dress him than deer shot at camp.
Big fat lazy Bucks Co. deer = some good eats !

Thanks. I'm hoping to have 4 in my freezer this year, though. :D One down already.
If you want to make sausage out of it, let me know. I make summer sausage at my house. You'd just have to help me make it. 2 hours of your time and we'd make 5 three pound logs. Time is the only problem. :D

Sound's Good ! Iwill bring some refreshments too. The next deer will be condsidered a specialty deer.Sausage,Jerky and the like.
The one I have in the box right now is all slated to be on the grill.
What cuts of meat do you use for SS.

Just ground. I use 12 pounds of ground venison and 3 pounds of ground pork. Unless one of us shoots a pig, I usually buy the pork :D.
You'd just need to show up with the ground venison. I'll provide all the spices, the grinder, sausage stuffer and smoker.
Joe D and I do it all the time. Let me know when you poke another deer. I'll be at it upstate tomorrow. If I don't have time to butcher myself, I drop it off and tell the butcher to grind the whole thing except the loins and straps.
